    Just found my new favorite bacon. Nice and thick, salty but not 'holy shit where's some water' salty, hint of sweetness... damn it's good! Picked it up at WinCo.

    If chewy bacon is the issue try cooking it longer so it's super crispy before going in the pancake.

    @Pudge ’s syrup is always awesome on pancakes. I think the syrup mixed with the bacon was the problem.

    Ya'll making those bacon pancakes way too complicated.

    #1 Bake bacon in oven, 400 for 15-20 minutes, keep an eye on it. Either use parchment paper on a cookie sheet or one of those baker's racks on a cookie sheet. I like to get the bacon extra crispy for pancakes, so it stands up to the syurp.

    #2 Cook pancakes on your griddle like you normally do them. Personally I like to make them kind of small/thinner for bacon pancakes, where they are about the diameter of 1/2 of a strip of bacon.

    #3 Layer them. Pancake, bacon layer, pancake. If you are feeling really gluttonous, or made kind of small "silver dollar cakes", double up the layers.

    #4 Make sure you have real deal maple syrup, I like to microwave it just a bit, make sure its good and warm.

    Not many yet, mostly stock.
    Rapped bacon around dates, slow cooked in the oven for 20 minutes at 350F-325F depending on your oven... OMG. Tooth pick to hold it together. They are like potato chips, you just cant eat one.
