    I went with the spatchcoked method too. Smoker was struggling in 9°F windy weather. I got in an hour of smoke and gave up. Finished it inside in oven.
    As it cooked indoors I smoked the spine and giblets with some Turkey stock, butter and seasoning to use in the gravy. Came out amazingly tastey.

    damn everything looks so good. I have actually been looking to buy my parents a smoker for x-mas and you guys seem to have this locked down, any recommendations on a smoker brand or type I should be looking for? gas/pellet/electric? Any help is appreciated

    Recommendations...as with everything “it depends”.

    These days you can go wrong with most options out there. If it’s a gift, consider what the price range is and the effort your parents would put in to it. Pellet is easier than a Big Green Egg/Kamado Joe but not as versatile.

    Electric is the easiest to use. Set the temp like an oven. If you go electric I suggest getting a smoke box or tray such an the Amazen smoker tray, also a wireless remote thermomete. I have smoked a pork butt for 10 hrs without having to touch it a single time. Very easy and convenient. Other smokers are better and more versatile but more work, some people are into that though and prefer it that way.
