    Shut down for the day. Madelyn was exhausted and getting bored. We collected from 10-1 then cooked til 6 so I can't complain. Not bad for a 6 year old girl. Plus she got about 30 logs of firewood today through the mud.
    I was able to pull off about a gallon of syrup, but that front pan has a ton of sugar in it. My brother will be cooking all day tomorrow and will probably make a ton of syrup while I'm at work.

    I live about 200 yards from a dairy farm that makes milk,cheese, and ice cream. Good stuff , I should see if they wanna include some of my maple. They also sell my syrup there.

    My brother put a dent in the sap today. We had 700 gallons yesterday when I stared to boil, i got through about 100, he did about 400 today (he boiled for about 12 hours). So there's a couple hundred left to do tomorrow plus whatever is collected tomorrow. Right now it's snowing hard and we are supposed to get 6 inches or so tonight. But it's supposed to warm up all of next week so we should be getting tons more sap. We are off to a great start this year, one week in.
    1st Picture just before drawing off some syrup, you can see there's lots if sugar up there because of the dark color
    Then after pulling off a gallon or so of syrup. The darkest stuff is finished syrup, the lighter colored on the right has a ways to go and is flushed through from the back pan.

    It's hard to explain but the liquid moves it's self along based on temp and viscosity, cold sap that enters the pan pushes everything forward. Sap slowly drips in the back pan and slowly comes out of the front pan as syrup. it's almost a constant flow in and out when your doing it right.

    I'm shutting it down for today. Worked 12 hour shift then 4 hours here. Same deal tomorrow. Evaporator was boiling over 24 hours this weekend. Burned over a cord of wood lol.
