    I think I forgot to put my sticker on some of those quart bottles. Oh well you all know where you got it from :)

    I just got back from taking the buckets down and pulling all the taps out, I hate that part of the season.

    Yesterday I had to drive to a container distributorto buy more bottles, tundra was packed full. I picked up 25 more cases of 8oz bottles (12 bottles per case). The 8oz is our most popular size we sell locally. Those 300 bottles should be filled up tomorrow and that'll do it for bottling this year. Ended up with about 80 gallons total, id say 1/3 of it is sold right here on tundras.com :) What a great year.

    I'm making waffles for dinner. As odd as this may sound, I'm excited...i haven't had syrup on food in months. I taste every batch that comes off the cooker but I rarely actually eat the syrup.

    It's all good Sean. Rookie mistake hahaha.
    Most repeat buyers go for the quarts due to the value. The glass looks much nicer though and the bottles can be reused for whatever. I have one guy who buys 2 gallons in 1/2 jugs, and 2 gallons in quarts (he even provides the jugs)

    I can get them and they cost about the same as quart jugs to buy, as well as one gallon jugs. I'm not a huge fan because of the size. It takes up a lot of fridge space and I think I can fit 4 quarts in a medium box but not 2 half gallons. But I will do whatever the customer (you Matt, you) wants;)

    @Pudge in noticed that this years batch is more golden in color vs last year that was more brownish/amber color, does that have anything to do with sugar content, temp, cooking, etc.? Or im i the only one that noticed the difference in color?

    The flavor on this batch is much richer than last year IMO. Maybe it’s just me LOL

    You are correct on both color and flavor. 90% of this year's syrup is just what you described and it's absolutely the best flavor IMO.
    There's nothing I can do to control it, the sugar content is the same. I'm not sure exactly what makes it different colors or flavors. My guess is the sugar content of the sap when we start cooking, then depending on how long it has to cook....the color and flavors change

    Clean up...it sucks. Big tanks, every bucket and tap need to be washed with bleach solution. It really takes days. Everything needs to be clean and dry out before we can store it for the year.

    Buckets are just about dry and ready to be stacked up and put away. So much work cleaning them. Started cleaning out the evaporator today too. The pans need to soak a few days in the cleaning solution then they can be rinsed and stored. We're getting there. Maybe one or2 more days work.
