    We're thinking about going to the oyster roast, maybe bringing a couple of friends that live in York County. We'll be in NOLA the week before, so the boss wants to make sure our party budget will support.

    About to bottle up 10 gallons that has been heating up to 220° for the last 2-3 hours. Takes forever to get the syrup up to temp on the propane burner, doesnt help we start with buckets of syrup that are 40°

    First test cup was a little high on the specific gravity. Need to add some sap to it , to dikute it down to perfect syrup. Bring that up to temp them re test

    Here's the test cup and hydrometer. We want it floating right at that red line

    Mini's sauce is the best I've ever had. I've tried making my own to my liking but all I need now is mini's!!

    Anyone know a good place to buy packing peanuts for cheap? I had a ton last year from when I ordered bottled but none this year. I need to be sure I get you all your syrup safe and intact.

    Mini's is excellent. East Carolina style, my favorite. It's tied for first with Carolina Shine. The shine is vinegar based with a hint of sweet.
    I used the Mini's on pork chops, but I think it would excel on pulled pork. The chicken thigh recipe on the bottle sounds good too. That will be my next effort.

    Now back to the regularly scheduled maple syrup thread.

    Tomorrow looks like the last day we'll get any sap. I'll go get what I can, then we'll be pulling the taps.

    Still have more to bottle up, about 35 gallons, maybe more still to go.

    I'll take some pictures of the various bottles tomorrow and post them.... and I'll start shipping orders as they come in :)

The lady diwn at USPS hates me, last year she wanted me to set up a business account and have me print labels and pay online and have the boxes picked up from my house.
