    Not sure if i mentioned this earlier. My last shipment of plastic quart bottles came with the wrong state logo on them. They assured me they would sent some Connecticut bottles. Well I've been waiting. ..and waiting. Called to see what was going on yesterday. Low and behold the CT bottles are backordered with no timeline. So I told them to just send me a generic jug. Next year I'll be going with a different company for bottles for sure. This has put me behind 2 weeks on bottling for you guys.

    Well it appears that not giving up on the season last week, and going out to ream the taps was a great idea. The weather helped too. Our sap has been running 1.6-2.1% sugar this year. What we got today is almost 4%. Doesn't seem like a huge difference but when you go from a sap to syrup ratio (gallons) of 50:1 down to 25:1 It's a huge deal. I was thinking today I'd run out of fire wood before sap....well I won't let that happen now, this stuff is too sweet not to cook. We have burned about 8-10 cords so far and I'll be splitting more asap and hopefully Friday I can take a drive to my buddies saw mill and pick up his scrap pine slabs, those burn fast and hot and its free, I just trade some syrup for it. Still need to mix in some hardwood here and there but it's easy to split and makes sap boil which is all I need.

    I brought in the last of the dry fire wood we had left. Supposed to snow tomorrow so I wanted it inside. Not sure what I can do after that is burned if the trees are still flowing. Might have to call it a year, or buy some dry wood. We'll see what happens. Should be able to get some quarts bottled this weekend though. That will be nice....especially for all of you!

    Got 150 gallons of sap today, will cook it tomorrow. It was almost 3% sugar which is nice normally we are 1.7-2.3% Earlier in the week it was 4% which was awesome. I figured out the higher sugar content was because of the sap freezing in the buckets. Water in the sap freezes before sugar sap so the ice is mostly water, so basically the ice is low sugar content. I dumped any ice out today seeing it's low on sugar content. I did some figuring on the iced sap theory and will likely start dumping ice out if it's around 1/4 or less of the total sap. After 1/4 there is too much sugar to waste. Kinda cool.

    Anyway. I have 120 plastic quart bottles that will be full of syrup this weekend!!! We're getting close guys and gals. Oh and we are up to about 75 gallons this year, well beyond our 50 gallon goal and 55 gallon output from last year. We have a real chance to reach 80 gallons this season, thats around 4000 gallons of sap to make that syrup!! So about 35,000 lbs of sap collected thus far, about 150 hours of cooking, and maybe 8 cords of wood cut, split, and burned.
