    Smoked a 10 lb pork butt this morning. Mustard slather, S&P rub. I have no patience so it was on the RecTeq at 6am at 270 for 3 hours, spritzed with apple cider vinegar every hour on the hour after that until the fat cap cracked around 1:30. Spritzed and wrapped in aluminum foil. Probed it, turned the temp up to 295 and waited for it to hit 205 degrees. It rested for an hour and we ate at 5pm. Soooooooo good. Topped it with Salt Lick BBQ Sauce.
    Have some brisket flat jerky on the smoker right now.

    Jerky is done - I've been using Prime Brisket Flat and cutting it about 1/4 inch thick. I cut this batch into smaller pieces and had it marinating since Wednesday (I forgot about it). I like it with some moisture and a little chewy. This batch came out perfect - it's been a good day for smoking. Not for taking pics though. Just realized it's blurry. Damn.

    You should try it (it was delicious btw). Beef stew sticks to your ribs...especially in ass-numbing climates. How do you feel about Ciopinno? That's my favorite, I'll post a pic of that next time I make it. :p

    Vegetarians can eat fish, right?

    Cioppino is an Italian fish stew from San Francisco. I use a simplified-from-classic recipe suitable for seafood-challenged inland Texas. I load it up with double portions of cod tenderloins, jumbo shrimp, minced clams, in a tomato base with green peppers, onions, garlic, parsley, and a cup of white wine. :drool::hungry:

    My wife loves it when I cook. :D

    Dinty Moore is serviceable when dosed liberally with black pepper. If you don't have access to the real thing.

    Cioppino is the real deal. Being fortunate enough to be bordered by the Chesapeake bay, Atlantic ocean and albermarle sound, the sky's the limit. Oysters, scallops, shrimp, clams, flounder, tuna, mahi, redfish. Not to mention the abundance of freshwater fish. We make it 4 or 5 times a year, mostly in the winter. Yum.

    Does she eat any meat?
    My niece is a vegetarian, but she will eat limited amounts of fish, turkey and chicken. Her fiance is a dedicated carnivore. But neither one of them cooks, so their compromise is to eat out a lot.
    When we have family gatherings, we try to accommodate her and a couple of other people's dietary preferences. But one nephew is a strict vegan. So screw him, he's on his own.

    No, she's a true vegetarian. No meat of any kind, though she does eat dairy and eggs (i.e. not a vegan). So no worries there, @TaquitoBandito

    One of my friends has two daughters. One is vegan and the other is gluten intolerant (actually, not on this anti-bread fad) so when they both come home for Thanksgiving or Christmas, there aren't a lot of dishes they can both eat.
