    Making 2 batches of Italian nachos. One is deep fried wontons and the other corn tortillia chips for the gluten free. Each has a good serving of pizza sauce, 1 pound of hot italian sausage, 1/2 pound of mozzeralla , whole lot of pep, banana peppers and olives.     Tried a Smoked Chicken recipe from the Texas BBQ Brigade last week and it was disgusting. To redeem myself, I did a bourbon smoked chicken today and it was pretty damn good. Ran out of Bulleit bourbon (the stuff I like to cook with) and had to break into my Woodford Reserve. It was worth it.

    Thanks! Get some small potatoes and boil them in salted water for about 20 min. Then smash them a bit on a roasting pan with the bottom of a glass. After that toss them in some oil, butter or duck fat and season to taste. Pop them in the oven, flip them and back in the oven until they are crispy enough for you!

    We have two recipes that we alternate between. One uses curry, red onion and provolone (or mozzarella) and one uses cayenne, Dijon mustard, white onion and cheddar. We just use yellow curry because that's what our local white person grocery store sells but I'm sure it would be good with whatever curry you prefer.

    Fry onion in butter and garlic.
    Add flour and curry/cayenne and cook for a minute.
    Add milk (and dijon if using), bring to a simmer and cook until thickened.
    Remove from heat, add cheese and stir until melted.
    Add cooked macaroni and stir until well mixed.
    (Optional: add chopped raw broccoli and stir in as well.)
    Put in large baking pan, top with two layers each of panko and grated cheese with raw asparagus in between.
    Bake at 350 until the top is golden.
