    I'm going to make a La Viña–Style Cheesecake this week. I picked up the 2.5 lbs of cream cheese yesterday. Now I just have to find the time to do it.

    @SwitchThrottle Made the La Vina-Style Cheesecake tonight. Pretty good stuff. No water bath and it cooks at a high heat. No crust, just eggs, flour, cream cheese, sugar and heavy cream. Tastes like a mix between a custard and a campfire marshmallow. Has a nice oozy center - the pic of it came out blurry but if you squint, you'll see it.

    I don't water bath mine either, but I do a graham cracker crust base and a half a lemon zested. 500 for 15 minutes, 200 for an hour, then slow cool.

    La Viña–Style Cheesecake (from Cooks Country)

    7 large eggs, room temperature
    2 cups (14 ounces) sugar
    2¼ pounds (36 ounces) cream cheese, room temperature
    1 cup heavy cream, room temperature
    ¼ cup (1¼ ounces) all-purpose flour

    Adjust oven rack to middle position and heat oven to 425 degrees. Spray or lightly sprinkle 2 approximately 16 by 12-inch pieces of parchment paper evenly with cold water. Crumple each piece of parchment into ball, then gently uncrumple. Overlap parchment pieces slightly to form approximately 16-inch square. Press parchment into bottom and sides of 9-inch springform pan. Fold overhanging parchment outward, over edge of pan. Using scissors or kitchen shears, trim overhanging parchment to about 1 inch past edge of pan.

    Process eggs and sugar in large (14-cup) food processor until mixture is frothy and pale yellow, about 1 minute. Add cream cheese, heavy cream, and flour and pulse until cream cheese is broken into large, even pieces, 8 to 10 pulses. Process until mixture is completely smooth, about 2 minutes, scraping down sides of bowl and breaking up any large clumps of cream cheese as needed (processor bowl will be very full).

    Transfer batter to prepared pan and place pan on rimmed baking sheet. Bake until top of cheesecake is deeply browned, edges are set, and center of cheesecake registers 155 degrees, 45 to 55 minutes (center will be very jiggly). Remove cheesecake from oven and transfer to wire rack. Let cheesecake cool in pan for at least 2 hours.

    Remove side of pan. Gently peel parchment away from sides of cheesecake until parchment is flush with counter. To slice, dip sharp knife in very hot water and wipe dry after each cut. Serve slightly warm (after 2 hours cooling) or at room temperature. (Cheesecake can be refrigerated for up to 3 days; let sit at room temperature for 1 to 2 hours before serving.)

    Cheesecake
    40oz full fat cream cheese (room temp)
    1 1/2 cups sugar
    3T flour
    1t Vanilla
    1/2t lemon zest
    5 eggs room temp
    2 yolks room temp
    1/2 cup heavy cream

    Crust
    1 package graham crackers (crushed)
    1/4 cup butter melted
    3T sugar

    Heat oven to 350f

    Mix crust (I use a ziplock) and press into bottom of 9" springform.

    Bake 10-15min. Take out to let cool.

    Heat oven to 500f

    In a large mixing bowl, beat Cream cheese with mixer, then blend in sugar, flour, vanilla, lemon zest, eggs, yolks and cream until fully blended.

    When done mixing, tap the bowl on the counter (a lot...you have to get the bubbles out).

    Pour batter into spring form pan (try not to add bubbles when pouring).

    Into the oven at 500 for 15 minutes.
    Turn oven down to 200 and bake 60 minutes more.
    Turn oven off leave cake in over with door closed for 60 minutes.
    Open the door leave cake in for 30 minutes.
    Remove cake to cool for another 30-60 before moving to fridge.

    Went to a 50’s style drive up restaurant. Had their Italian steak sandwiches with fries and a chocolate malt shake. Entertained by watching people rip out burning up their tires and showing off how they like to invest in fuel and rubber.

    Made a simple Mexican casserole last night. Found the recipe online, but it was delicious. Ground beef, taco seasoning, chili powder, tortillas, refried beans, black beans, corn, cheese and jalapenos. Will do this again!
