    My old charcoal grill finally crapped out on me and have been looking for a replacement for a couple of months. My local BBQ store finally got a shipment of Santa Maria grills in stock and I was able to pick up the 30 x 20 which fit perfectly once I cut the legs off. Friday I broke the grill in with a nice Trip Tip and veggie kabobs over white oak ans Sunday night was a spatchcocked chicken over cherry wood.

    Made a 25 lb brisket on the recteq today, technically it started at 11pm last night. Wrapped in foil at 10am after it hit 165 degrees and pulled it at 206 at about 3pm. There is less than a pound left now lmao everyone ate that like it was the best beef on earth. Damn it was good

    Ive got the same model I just use the mesquite pellets I get from the local bbq store. Love it this grill is awesome. Had it for about a year now

    Started corning some beef brisket today in preparation for having pastrami on Memorial day. The recipe is supposed to replicate Katz Deli in NYC for the pastrami. I've never been, but if it's better than the last time I made it, I'll have to go. It could be called the 'I'll have what she's having" pastrami. Katz was where Meg Ryan had a great scene in When Harry Met Sally.
