Picked up a used Weber kettle a few weeks ago and have been learning to cook with charcoal. Done some burgers, a whole chicken, pork chops and did a 13 hour cook on a pork butt.

Made this delicious NY strip on the kettle.

used a vortex, seared it in a cast iron pan sitting over the cone. Finished indirect to 135

Not today, but last week, did another rack of pork ribs in the Egg. DE. LISH. YUS!

So, just to tell the story, a couple months ago one of the neighbors was cleaning out his house and garage, prepping to sell his house. And he put out one of the "Big Green Egg" knock offs (this one is blue). I go over, take a look, see a "free" sign on it. I guess I looked pretty funny pushing/pulling a blue egg down the street. Cleaned it all up - and all I had to do was replace 1 screw on the fold down table side.

Still working on the fine tuning of temperature control (yes, I've got it down to leave the bottom vent alone and just adjust the top for temp), but I did get it to maintain 225 for 4+ hrs last week.

Also still working on my dry rub. Let's just say 2 of my ingredients are brown sugar and coffee.

Stock, with a few cosmetic mods.
Got some wings on the smoker right now. Already rubbed with a bbq type rub and finishing up with Franks Wing Sauce, Franks XXXHot and a spoonful of butter. Pics to follow.

The grill was running 550 degrees or so. Took about 80-90 minutes to cook them.

    Under that the jalapeños

It’s in Georgetown, WA, a suburb of Seattle, where they make the best beer in the world

Wife picked these country style pork ribs up at the meat market the other day, so did them with 2 different rubs. Have corn going now.
