    Pork chops and fries on the pellet grill today.
    I prefer charcoal/wood grilling over smoking, but this pellet grill/smoker is just so convenient that I use it about 5 times a week.

    I bought a Camp Chef Woodwind 24 Pro last week and broke it in yesterday with a pork butt. The cook was fine except I left it in the stall for too long before wrapping it in paper. The SideKick with sear box is being delivered today. This is my first smoker and cook, so I'm happy with the result!

    That's my blood on the counter - I nicked my knuckle trimming fat. The rub is just yellow mustard and a commercial KC rub I picked up at Cabelas.

    Original cast iron was always used on wood fires before stoves even existed.

    Nothing today. Smoked a pork tenderloin yesterday. I have a 30 year old MHP grill. Put one burner on low and smoke box full of mesquite chips on the ceramic bricks. Kept it about 230 or so. Came out great.
