What are you grilling today?

The aftermath of Grilled Tequila Lime Shrimp. My family is a group of savages….lol

 

Using the pellet grill as an air fryer. Fish & chips for dinner.

 

Fresh steak burgers from the butcher, bearded butcher brand black seasoning and sharp cheddar cheese.

 

Skirt steak; Rare with chimichurri.
Texas toast, 3-bean salad and beets.

 

Here is a few recent cooks.
10 pound pork loin and 12 pound Turkey

 

Not really grilling, but a couple brined and spatchcocked turkeys on the Traeger for a work dinner tonight. Just pulled them and doing 3 tritips now.

 

That's a meal fit for the gods.

 

Nothing fancy tonight, just some chicken wings and cold beer. Cant complain.

Pork loin roll-up;
Spiral butterflied pork loin. Garlic aioli, mustard, cheese and bacon, roll up and cover with bacon weave. Grill on indirect heat.

 

Thanksgiving a couple of weeks ago.

 

Grilled pork chop with salad.

 

lamb rack, brats, rice and cheesy veggies.

 

Didn’t snag a picture but I bribed a whole chicken for a couple of hours and then spatchcocked and smoked it for about 4.5hrs@225*. Came out perfect. I got a Pit Boss pellet grill a couple of weeks ago and I’m still trying to figure out how to really get the smoke into the meat. Smokes better than my egg I’ll say that but it sucks as a grill.

3yo asked for seconds so I snapped some pics. You can barely see the smoke ring on it. I didn’t throw it on high long enough to really darken and crisp up the skin but no one in my house eats the skin so not to concerned. Juicy and tender though.

Lamb chops, chicken thighs, grilled cheese with tomato and onion, and a salad.

 

Pork chops, chicken thighs and a t-bone.
Steak served with roasted potatoes and mixed veggies.
Pork and chicken will be vacuum sealed and frozen for dinner next week.

 

I didn't get any pics on the grill, but I had lamb chops, chicken, brats and grilled sandwich on the grill, served with baked beans.

 

Very tasty

 

Brunch this morning; Ribeye steaks marinaded in garlic aioli overnight, spicy steak fries on the pellet grill.
Served with homemade onion marmelade and sunny side up eggs.

 

Lamb rack, bratwurst, mashed potatoes, baked beans and tomato salad for dinner tonight.

 

It wasn't grilled but sure was GOOD !

 

Onion marmalade? That sounds amazing!

Does a cold smoke count? Brined for 5 days, cold smoke today for 6 hours, and I'll smoke the hams tomorrow.

3 slabs of bacon
3 hams
3 pork chops

 

I just finished pulling a 2 lb tri-tip off of the pellet smoker. I was slicing it and eating pieces at the same time....now I'm full.

 

Doesn't everybody do the same thing ?

 

A chunk of pork loin rubbed with Dijon and Southern Soul Dust. A few strips of bacon added because...bacon.
