    Pork loin roll-up;
    Spiral butterflied pork loin. Garlic aioli, mustard, cheese and bacon, roll up and cover with bacon weave. Grill on indirect heat.

    Didn’t snag a picture but I bribed a whole chicken for a couple of hours and then spatchcocked and smoked it for about 4.5hrs@225*. Came out perfect. I got a Pit Boss pellet grill a couple of weeks ago and I’m still trying to figure out how to really get the smoke into the meat. Smokes better than my egg I’ll say that but it sucks as a grill.

    Edit:
    3yo asked for seconds so I snapped some pics. You can barely see the smoke ring on it. I didn’t throw it on high long enough to really darken and crisp up the skin but no one in my house eats the skin so not to concerned. Juicy and tender though.
