Yep the RT slices through tomatoes like buttah.
And every time I dig through the cooler for beers I yell FREEDOM! Like Mel Gibson. It seems to disturb the wife and dogs.

It's going to be busy at work so I decided to food prep.
Lamb ribs, chicken thighs (4 different spices to keep it exciting) and brats, with mashed potatoes and baked beans.
Will do a quick salad with it when I get home while I reheat the meal.
The rest of the meat is vacuum sealed and will be frozen for later.

Looks great! How are the lamb ribs, and how do they cook compared to baby backs?

...and what about prep and cooking them?? any difference in keeping them tender and not drying out?

Lamb ribs are have a lot of fat on them, probably more than pork. I guess you can do a low and slow like pork, but I always just grill them the same way I do the chicken. They were about 165 when I pulled them off.

@tripleconpanna , I just season them with whatever favorite seasoning I have at the time. Just salt, pepper and garlic is actually all you need, but rosemary and thyme goes well with lamb also. On this one I tried a bbq rub that I recently bought, and it was actually more salty than I would have liked.
They have a lot of fat, more than pork ribs. Almost like pork belly, so they will not dry out. For most people they might be too fatty.
I always want to try a low and slow like pork ribs, but I grew up on a ranch where we had our own sheep, so lamb was a staple, and we always just grilled them, so it's hard to change old habits.

Here is a closeup to show the amount of fat, and you can see on the meat parts how juicy they are.
You need a napkin when you eat these!

The finished product. I overshot the internal temperature by 5 degrees, so not as much pink as I like. But still moist and tender.

The pellet grill was turned up at it's highest level, about 450 and with the fan blowing it's almost like an air fryer.

Grilling pork chops, lamb chops and brats for work lunches.
BBQ, Garlic Aioli and Lemon pepper pork chops for variety.
Vacuum sealed and go in the freezer.
I will make steam-in-the-bag veggies or salad with it. Quick and easy grilled meat for lunch every day.
