    On the Smoker:
    Pork belly, 1/4 lamb leg, and lamb leg cutlets for a curry stew.

    My daughter and I are totally into pizza right now. So I’ve been doing flour wraps in the oven and cutting it like pizza. Also omelet with ground meat and spinach for breakfast cut into little triangles.     These are actually really good and lower carb than real pizza. Also mostly whole food ingredients! Not nearly as bad as chicken nuggets or Walmart pizza.

    Had a happy life and butchered humanely by me. Beautiful smoked ribs for Christmas. Rest was deep fried in its lard for traditional carnitas.

    I have tried them all. These three are the best. JMO. With the OG I add brown sugar and some Bee-haven Honey.
    Best Honey I have ever had. And yes I buy it by the half gallon/6lbs x2.

    can of modelo (my favorite beer); 1 tsp red pepper flakes; 1/2 tsp each salt, garlic powder, black pepper; I chopped large onion. Marinate 24 hours. Boil 10-12 minutes on grill. Finish with grill sear until thoroughly cooked

    Smoked a corn beef for 4 hours, then into the crock for 5-6 hours in beer butter bath, bacon wrapped cabbage, taters and vinegar slaw.

    Easter dinner; lamb rack on the kamado, served with roasted potatoes and green beans, and a garden salad.
    Lamb was marinaded in Italian dressing with added worcestershire, some herbs mixture, salt, pepper and crushed garlic.

    Promised the family I'd smoke a brisket for Easter, then I got my call for my second Covid shot on Friday morning. Felt like shit Saturday but pushed through and smoked some brisket flat jerky that I had marinating in the refrigerator (forgot to take pics but, spoiler, it looks like jerky). My Covid shot shoulder started hurting Saturday night and I noticed I had a little red blotch on my shoulder above my bicep. Ignored it, prepped the 16 lb brisket, and passed out until 2am. Put the brisket on the RecTec and don't really remember smoking it. I pulled the brisket at about 11:30 on Easter morning, passed out some more. Took a shower and we ate around 2:30. It was the best brisket I've done. I guess I should get vaccinated before every brisket...

    That night, the blotch on my arm covered the front of my shoulder and was hot - I shot it with a touchless thermometer and it was 101.7. Apparently it's called "Covid Arm."
