    Dry aged Texas Wagyu New York’s. I was lazy and just used the smoke tube with some mesquite. Super tasty!!!! Local butchers rule!

    For me, it's Top Round. I cheat a little and use the Milanesa cut Top Round that our local grocery store has. It's already cut about 1/4 inch thick, so I just slice it in strips and put it in my jerky marinade for 2-3 days.

    3 racks, soaked in Dr Pepper, then rubbed with spg and tried a new spice to me; kosmos killer honey bee. Smoked with almond wood and a smoke tube of mesquite. 4hour smoke, 2 in the oven after the wrap with butter honey Bsugar and apple cider. They were great!

    So ive never really done ribs, never grew up eating ribs. But I took a few things from a few different people, that being one of them, sort of a brine and the sugar cooking during the smoke, and the wetness can sometimes help the rubs stick better but I still try to pat down with paper towel. I’ve gotten lots of compliments so I’ll keep on doing that probably.
