    Yesterday's dinner. Fillet glazed with Korean style sauce. My wife had the butcher slice them through thickness so they would be more like steaks than a softball sized lump of meat. She asked what wine, I said old vine zinfandel. She did one better and pulled some ancient vine zinfandel out of the rack.

    Just finished a double trouble, 17 and 22 hour pork butt smoke. I was able to leave it while I went to work and had someone check on it every so often. The second bigger butt tastes wayyy better; I cut slits and jammed garlic down them, then filled with hot sauce then used spg and even more P and a Weber dry rub.

    Celebrated an anniversary while out camping. I tried to do the charcoal snake in a small Weber, but everything takes longer camping. I ended up having to throw a shovel full of pecan coals underneath to speed things up. I finish seared it on a flat top. It was a 60day dry aged American waygu double thick ribeye. Salt and heavy pepper.

    Went to sams to get a cowboy ribeye. They were all out so I settled for 2 Prime Ribeyes. Threw a really light dusting of How To BBQ Right Hot BBQ, then some Montreal Steak seasoning. I am out of normals from Kosmo so these will do.....

    40 minutes of smoke, followed by a really hot seat on both sides for 1 minute.

    I'm a meat-for-dinner type of guy, but we've been doing homemade pizzas on the grill lately for the kids. On a pizza stone at 650+ degrees, they cook in 4-6 minutes.

    We tried pizza in a cast iron skillet on the bbq once. Worked pretty well but we should have kept the heat a little lower to keep the crust from burning.

    We haven't tried pizzas on our cast iron skillet yet, but we've found that keeping a pizza on the stone even a minute or two too long can burn the crust to the point where you can't eat it.

    I use indirect heat, directly on the grate. That way the bottom gets air and crisp up, but does not burn.

    Did the 3-2-1 method on these st Lewis style ribs, they weren’t very tender....
    But the tri tip and rib eye were great last night.
