    Last back strap from last year's hunt. 2 weeks until wyoming antelope hunt and hopefully I can get another good bull elk this year. Also preboiling some corn before it gets foiled for the grill.

    Holiday weekend and no one is grilling, haha?

    I started prepping and getting the food yesterday. Doing chicken fajitas and carne asada. I literally have been prepping, marinating, you name it since 7am... We have about 10 people coming over.

    Having some desert the wife made. She is also making her homemade cheese dip that is awesome!!!

    Also making some margaritas and frozen margaritas in the Margaritaville machine all day. Wife makes some green apple sangrias that will hurt your feelings they are so good. They are the one time where I will put something fruity in my hand and not be ashamed! Have 36 Coronas also for everyone so we are having a fiesta!!!!

    Dinner starts in about 1.5 hours.

    I made a homemade salsa that I smoked and roasted the vegetables and peppers on the Yoder. Came out next level. Also made a peach salsa with some fresh picked Georgia peaches the family picked on their way up here yesterday.

    Also made a homemade Gia smile with some of the roasted and smoke vegetables.

    About 3 hours to stall temp (150°-160°) then wrap in foil for 1-2 hours until I hit 190° then unwrap and finish in pan for about an hour.

    I make my own rub. It’s a sweet heat with tons of brown sugar.
