    Tonight: 15 minute dry salt brine. Rinsed off throughly and hit them with a layer of Hot Cow Cover and SPG. Turned out amazing. Hoping I get a set of GrillGrates for my birthday next week

    Saturday night. Did a quick cook on some ribs for me and my 7 year old. I used a Honey chipotle rib rub. Smoked at 225 for 1 hour. Cranked up the RECTEC to 350. I did about 30 minutes unwrapped and then 30 minutes wrapped in foil. Aka Texas crutch. They were done to my liking so I removed them from the foil. Glazed with a vinegar based bbq sauce and let them go another 15 minutes uncovered. The results were phenomenal. I ate 4 small ribs and my 7yr old destroyed the rest. He needed a shower immediately after

    So I did a 10hour brine on a 10lb pork butt. Holy shit it took forever! Pretty much 24 hours at 225, I didn’t wrap at the stall point; next time I will. I used mango magic rub and SPG and brown sugar. It was super tasty and tender! Look at that bark, WOOF!

    Turned out great. Bunch of happy plates.

    I’m a little pissed. I went too conservative on the pepper. Have a pregnant wife so she is being picky. Also going to go fat side up next time and give myself more time to rest. I only got 1 hour this time. She just wouldn’t give up!

    Cooked for almost 10 hours, rested for 2.5 hours.
    Smoke ring was not as heavy as @WestexSBK brisket above, which looks great by the way. The little traeger kept giving me issues of overfilling the fire pot after 2-3 hours, which required me to pull the meat, rack, and clean out the pot before restarting the grill. I wrapped in foil at 165, cooked till 202.

    I’m using a RECTEC 700 and cookinpellets. Even with treager pellets I get phenomenal smoke rings. Never had this kind of turnout with my Louisiana or Green mountain grills.

    My Green Mountain had an issue similar to that. They sent me a new heating element. Might give treager a call

    Great looking brisket by the way! What kind of rub or injection did you use?

    I the grill works fine at the 250 or higher setting, I have been reading a lot of people having similar issues with Traegers at the 2 lowest settings. So I may be looking for a new grill at the end of the year.
    I used this rub, but added more pepper and 3tablespoons of brown sugar, and used smoked paprika

    A little this and that...Broke now
    I bought a tray of pork chops from Costco.
    I Seasoned them overnight using three different rubs to see what I would like best:

    Veterans Q chicken/pork
    Kosmos Dirty bird
    Traeger Pork/Poultry
    Sauced them with:
    Veterans Q sweet and heat which has been my go to
    Kosmos honey jalapeño (Holy Moly this is good stuff! It made my eyebrows sweat! )

    Sorry no after pics ! So far no clear winner on the rubs but a special nod to Kosmos honey jalapeño for the just barley win
