Not today, but Tuesday. This bag of pork chops after a few days in Italian dressing. I'm expecting porcine goodness.

Yesterday was smoked pork belly and ribs for dinner. Served with homemade cheese biscuits and green beans.

Depends on the temperature of your grill but usually only about 3 minutes on each side over medium heat. Not much different than boiling, they turn pink and firm up when done.

I gotcha...guess the hardest thing is I usually only eat royal reds....so they are already somewhat pink when raw..

Blackened some black drum. Yeah it sounds redundant.

Longevity one one of the reasons I got one. These things can cook way better than the cheep grills I have been wasting money on.

    Happy 4th weekend!!!

Land of the free... Home of the brave!!!!

It is going down this weekend. Tonight I am grilling, then smoking for tomorrow.

We have a local butcher shop in Knoxville, Willy's Butcher Shop that is awesome!!! I try to support him for special occasions. When COVId hit a couple months ago, he donated 500 pounds of ground beef to anyone that was having a hard time. All you had to do was come by his shop and he took your word for it.

He has an awesome aging room and will custom age meat or anything for you. Everything is housemade. Tons of different products.

I got a 26oz. Prime Ribeye, aged for 30 days for tonight.

His Cold Smoked pork chops that taste like candy. Zero seasoning required on them.

Then we have his brisket burgers. Ground up brisket and prime beef. Last but not least is his Willy's burgers. Seems to be a combination of brisket, filet, garlic, white wine, provolone cheese, herbs, and carmelized onions. That will hurt your feelings!!!!

Also have a 17lb. Prime brisket, hand selected and cut this morning to smoke tomorrow by him!!!

It is not pictured but I have 3 pounds of wings and 3 huge racks of ribs. Wife is making a bunch of sides for the smoked food tomorrow!

Having about 25 people over tomorrow night for the smoking food 4th celebration! 2 mini kegs of beer from local breweries and 2 pickup truck beds full of fireworks!!!!!
