    I love the reverse sear on steaks and my go to method now. Smoke at 200 degrees for about 30 minutes. Pull off and crank the grill up to 600 degrees. Sear and then eat!

    I cooked them to 120-125 degrees away from the charcoal, then finished over the coals that were about 500 degrees ( so the lid thermometer said).

    Yes sir, it is delicious for sure. I smoke mine until they hit 115 and pull off. Once I crank the grill up I put them on for about a m in mute and half on each side and that brings it up to 125 or medium rare.

    Love the reverse sear. Having filets tomorrow night and this is how I will do them.

    Forgot to mention, I let them sit out for about an hour to bring them closer to room temp. I prefer medium rare too, but my family is a bit picky when it comes to meat temp. It's a compromise....

    Haha, same thing here. I take my wife's steaks up to 155 to 165 as she likes medium well to well.

    Setting a steak out to get close to room temperature makes it more tender and delicous.

    I did a leg of lamb for dinner tonight. Leg was in the smoker almost all day at 200-225 until 160. Potatoes cooked on the grill in the same juices. Served with green beans sauteed with onion and a little bit of grape tomatoes for color.

    I had an 11lb. Beef tenderloin sitting in the fridge for a few weeks and finally got around to cutting it up. Got 7 6 oz. burgers, and then these 11 filets. I am going to go ahead and cook them all tonight and what we don't eat I am going to seal them in the food saver. Plan on using them this week for lunches. Filet salads and just to eat.
