Grilled Teriyaki Swordfish and polenta slices.
Fish was marinated in teriyaki sauce. While in the smoker I boiled the leftover marinade and added honey, garlic, ginger and lemon juice. Used this to baste the fish while grilling. Polenta slices had some garlic pepper seasoning added and shredded cheese. Both were smoked for about 45 minutes and then grilled till done. Served with peas and carrots.
    I love this pellet smoker/grill.

We are having a Prime 16oz. Ribeye for me, and a 16oz. Sirloin for the kids and wife. We are having grilled zucchini and some corn in the foil. Zucchini got a light coat of olive oil, then a coat of garlic salt and pepper and a coat if Parmesan cheese. Corn was cooked while I was smoking some wings at 275 degrees which I forgot to get a picture of. Corn is dusted with a little butter, and cajon seasoning and cooked for about 45 minutes.

Wings were done at 275 for 1.45 hours with a spicy BBQ Rub. I made a sauce that was off the charts good. Combination of Franks hot sauce, butter, brown sugar, garlic, honey, pepper, and worsechire sauce. It would absolutely hurt your feelings it was so good!!!!

Steaks were smoked for about 30 minutes at 225 degrees. Pulled off the grille once internal temp hit 115. Cranked the heat up to 500 on the Yoder and put them on for about 2 minutes each side. Perfect medium rare and so good!!!!

Grilled Mahi Mahi on the pellet grill. No recipe; I just throw stuff together, but it includes blackened fish spice, and a glaze of butter, bbq sauce and thousand island dressing. I used some of the same sauce on the corn. My wife made the cole slaw.

    Jim,

Question for that setup, do you ever have to add coals under the foil?

Did you find a sauce for the garlic Parmesan wings or do you have a recipe? That is one of my favorite wing flavors out!!!

    I don't have a recipe. I just "winged" it.
I used roasted garlic powder and another garlic herb powder that I have, and salt & pepper. Sprinkled lightly with fine grated Parmesan. Then just tossed in a little bit of garlic parmesan sauce (Walmart brand). Don't do too much sauce.
