Nice looking bird! Love my WSM. Best smoker for the money IMO. So darn efficient. I did replace my door with the Cajun bandit door - less heat loss.

The chimney is good for a one-man-steak-nite cook too. A chimney full of coals and a grill grate right on top. ;)

Definitely could work. And thinking about it, may have to see if cast iron pan would fit and not be too heavy for it as well!

Cast iron pan is another workable option. I have a very small elevated grate that fits in my pans. A quick sear on both side of the steak on the screaming hot cast iron. Then set the steak on the raised grate in the pan to bring the internal temp up to it's finishing point.
I like my steaks (1 1/2" ~ 2" thick) still moving when I eat them, so I don't like to spend too much time in contact with the pan after the sear.

That sounds perfect! Going to have to do some experimenting with this as I just got some new cast iron I want to try out after I season them.

If steak is small enough, placing it under the chimney is another option.
