    Grilled corn is awesome, I like to toss it on the grill shucked, get a good char on the kernels then hit it with real butter, sea salt, pepper and maybe a dash of paprika...

    I do both ways, but typically shucked. I add a mixture of salt, pepper, garlic and butter while it is grilling. When I do ribs on the smoker I add bbq sauce and mayo to the mix and brush that over the corn.

    I won't call myself a master but I do enjoy grilling. I have 7 grills. Wood, gas, electric, smokers etc.

    Tonight was NY strip on the charcoal grill and ribs on the smoker. Small potatoes with garlic butter, and mushrooms in foil pouch on grill. Wife insisted on a salad also .

    Usually about an hour. I did not want the mushrooms in there that long, so I had the potatoes in the oven for 45 minutes and then put the potatoes and mushrooms in the foil on the oven for another 30 minutes.

    Tonight was flank steak. Marinaded for a little while in soy, worchestershire, red wine vinegar. Grill to 130 degrees.
    Served with potatoes and salad.

    Had a good day yesterday w the Traeger. Started off by BBQ'n some chicken thighs with cilantro chimichuri rub. (225 for 45 min, 400 for 15min)
    When those came off, I dropped the temp down to 140(ish) and threw on some CURED pork belly. Kept it on there for about 3 hours and then upped the temp to 185 for 30 min and finally 225 for 15 min (to help render a little fat and get a nice smoky exterior "rind").




    What do you call pork belly that has been cured and then smoked?

    I'll get some pics of the bacon tonight. All in all I think I made about 13 lbs worth. Maybe down to about 10 now that it has been cured and smoked.
