    For my birthday today I got to choose the menu.
    Lamb chops, brats, grilled sandwich and beet salad.
    Can't get better than that.

    I like sausage. Anything from Brats to Kielbasa. We have a local butcher who makes brats with all kinds of flavors added - apple, blueberry, beer, cheese, jalepeno, - some are better than others, but all are worth a try.

    2 lbs wild caught Nova Scotia salmon. No fake pink coloring that "they" add to farm raised salmon to make it pink. Pink and "reds" salmon are natural. I made up a jalapeno/mango marinade. Have a few cedar planks left.............done deal............love my Weber

    Yep........Ron is correct........It's all about the steam. The steam from the heated beer permeates the chicken. I've seen folks use Dr Pepper.

    • 1 LB ALMONDS
    • 1 EGG WHITE
    • 1/2 CUP GRANULATED SUGAR
    • 1/2 CUP BROWN SUGAR
    • 1 TBSP CINNAMON
    • PINCH OF SALT
    • PREPARATION
    Place egg white in a small bowl and whisk until frothy. Stir in both of the sugars, cinnamon and salt. Toss almonds with egg white mixture and coat well.
    -Spread almonds out on a parchment lined sheet tray making sure they are in one even layer.
    -Smoke temperature 225 degrees
    -Place the sheet tray directly on the grill grate and roast almonds for 90 minutes. Stir every 10-15 minutes or so until coating is dry.
    *(Mine took about 60 min to dry but then lowered temp to 150 for an additional half hour for more smoke flavor using mix of hickory and whiskey barrel pellets)
