    Yea, I don’t use lighter fluid, I also just got one of those chimney starters... so much easier... I use the starter cubes. I can’t get my pictures to upload... I have crappy service

    Partitions off the charcoal, so it burns slower keeping the rest of the grill at a more consistent lower temperature.

    Grilled some seafood pinwheels tonight. Laid out flat layer of Salmon, then a layer of Flounder, and large scallops and then fresh dill and parsley, and roll up. Let sit in the refrigerator for an hour to set up a little. Cut in wheels, grill, add some compounded butter, and serve.

    I know many people are fans of beer can chicken, but I have seen many articles debunking it. There is basically no way for the beer to reach the chicken through the solid side of the can, and the beer does not get hot enough to escape through the top and infuse the chicken that way.

    Of course I am not arguing about it, I am actually intrigued by this method and would like to try it with other liquids (I don't drink beer and can't stand the smell - long story...). Anyways, what are you all's opinion about it?

    I tried it . . . one. I actually cut off the top of the can (after I took a few swigs; no need to waste beer) and placed under the chicken that way so that there was more of an opening for beer to evaporate. I could not tell any beer flavor in the chicken. So I'm not personally convinced it imparts a lot of flavor; maybe I'm doing it wrong. I prefer spatchcock chicken instead.

    First pulled pork turned out perfect...although I committed blasphemy in the eyes of BBQ chefs everywhere though. 4 hours cold smoke on the grill, finished off in the instapot under pressure for another hour and a half. Then an our rest and soak in pure apple cider and it’s own juices. I had a hard time removing it from the pot as it was already falling apart.
