The bacon pieces are pretty small so they cook but don't get crispy unless they are right on the surface.

    Gotcha.

I'm going to make 2 batches.
    One your way
One with 50% cooked down bacon

    Just curious.

Sounds good! I am sure both will be tasty.

Nothing special but something I ate as a child. Beer brats and grilled corn on the cob. I'll sauté up some onions and make a salad to complete the meal. Brats in the beer bath and corn soaking in an ice bath for the prep.

Do you end up grilling them a little after the beer bath?

Yep. The par beer boil is just so they don't get too charred up cooking them from raw on the grill.

Since I saw your post I've been hankering for brats. And now i know it's par boiled then grilled makes me want some, even more.

Might have to goto the store and have brats for dinner

    Brats > dogs
    Way more flavor
    To me

4hrs unwrapped, 2hrs wrapped, 2hrs unwrapped. Tender but still a decent pull on the bone.

I think we only eat them once a year or so. But definitely recommend par boiling in beer for the best flavor.

I've made brats in the past

They'd always burn and burst on me

I think the par boil beer bath is the variable i wasn't thinking about.

And it reminded me they called them beer brats at the state fair.

I might be doing your technique once a month from now on
