is there any reason I wouldn't get the two pack? Says both fit but different part numbers.
Does anyone know if there is a difference other than quantity?

Not sure what site you're on, but those are not the part numbers I have for your 2002. My parts list: https://www.tundras.com/threads/posts/2712883

That is showing 00-02 as using 11214-50011 (LEFT) and 11213-50031 (RIGHT)

Given that the last digit of mine is "1" where yours is "0", I assume my part number is the latest version. And they're two different parts. (EDIT: As in, the picture shown there with two gaskets is not correct)

Gotcha. Yeah, I dunno, that looks like an older part number to me.

When I go to https://autoparts.toyota.com and I look up 11214-50010, it actually takes me to the page for 11214-50011. I don't know why TPD is using the old part number, but .. current part number is different.

To boot, when I go to the national parts site, the part is actually cheaper than TPD when picking up from my local participating dealership. It's only 60¢ cheaper which is roughly tax, but no shipping charge either...
