    My first experience w/it was at Buchon (a Thomas Keller place)... We were there for brunch, and I was having chicken and waffles. Like most of Keller's offerings, nothing is basic. The waffle was chive and bacon infused, and the chicken was fried in duck fat. I almost passed on ordering it because it just didn't sound right for breakfast. Mind you, I'll eat duck especially in curries and such, but that correlation of its flavor from past experiences just wasn't clicking in my brain. My wife encouraged me to give it a try (she actually shamed me into trying it), but OMG it was incredible and nothing like I was expecting. Just super clean and the chicken was beyond crispy but not over cooked or oily in flavor; it's almost like the duck fat enhanced the chicken's natural fat flavor and just made it better.

    My next experience w/it was at Daniel Bouloud's place in DC (I believe it's since closed)... Steak and frites (which were also done in duck fat).

    As mentioned doing fries in beef fat will also provide a very good 'fry' and here let me find a little video on twice frying...

    Organic, grass fed sourced, beef tallow has zero chemicals and overall is considered a healthy alternative compared to seed oils.
