    Because if you were the Japanese chef then I'd bow down. But you're not, because like me, you're just a white boy who was stationed there. See what I did there? I too was in Japan and Subic and all over Asia both in the suck and as a civilian. But my ego isn't that big that makes me think I'm some sushi expert because I ate a lot of food there. What I am saying is that Nobu is making real sushi in CO and he is a master in his craft. There is a saying that 10,00 hours will get you well on your way to becoming an expert. So when you let me know about your 10,000 hours spent making sushi will I listen to you soapbox about being a tourist.

    I drove down into NM two weeks ago past San Antonio Mt. Beautiful country. So damn nice, I'm looking at property there too.

    So without quoting a ton of posts, the freshest sushi I ever ate was caught butchered and eaten maybe all within 30 minutes. While still fishing.
    I've caught fish and brought them home the next day to butcher. The dogs got the dark meat while I ate chunks.
    Flash frozen is a great way to commercially process. Done on the boat, always a commercial fishing vessel.
    I think now the technology has caught up to the supply chain, so if you have a reputable establishment you can get good stuff.

    My "guys" weren't judges. There is no my guys. I'm not the one bragging about knowing a "master". I'm simply talking about my personal 1800+ day "short" time experience that I had in Japan vs zero days. Example... you want taco's in Japan or sushi? Want NY pizza in Guatemala? Just making it simple.

    Apparently, some of us need some help in this category... So, if you could delete this post, and then go back and multi-quote all the previous sushi posts (yes, even rainman's grocery store sushi dude at Kroger comments from last year) and repost this response that would be great... So, I could learn by example.

    Also, a thorough tutorial and maybe even a youtube video linked to your personal wikipedia page would be more awesomer!!!!!

    I only spent six months in Japan, but had some great sushi. After the first month my interpreter was taking me to his no ganji local place. Took me and my wife too when she came out for a couple of weeks. Good times with good people.
    Still, east coast sashimi, caught today, can't be beat.

Who the hell calls out a chef with no chef credentials based on how long you lived somewhere? You're getting all worked up in your assumptions while knowing nothing about me and where I served.     I had "jumping salad" in the Philippines. Fresh caught sand shrimp pulled up from nets. Put on top of a prepped salad bowl. Stunned with a vinegar salad dressing. Shrimp were stunned and still moving while you ate them. Excellent!
