    I’m going to warn you. Straight up…you master a steak on a pellet smoker and everything else will taste like chit. Hit it with a fast sear on a cast iron and it will be euphoric.

    Also, and this is the worst part. If you don’t already, anything cooked on a gas grill will taste like propane. It is part of the reason I switched to a Blackstone. Keep the direct flame away from the meat.

    :monocle:So you pull it and sear on the stove or use a cast iron pan in the smoker? All tips welcome, as I am still figuring this things out. Used to have a regular propane grill and a small electric smoker so testing things out with this new rig.

    I have been eyeing your Blackstone posts. Might have to go on the Christmas list…

    Dump common core and get back to basics - reading (phonetics not whole word), writing, arithmetic, art and history. My kids are past that age but I think Hillsdale college has a nice home school program. Trying to convince my daughter to use it or supplement with it. Tried to help my grandson with his math and the new common core math defies common sense and real world - "they shouldn't have to memorize". Teach some memory skills!

    It's called a reverse sear. You cook it most of the way first on the smoker and then hit it hot and fast to get the sear going. It's yet another YouTube blackhole if you dare.

    My notes say for a medium temp steak:
    • Smoker at 230ish for 200 degrees on grill (you'll need to adjust this for your smoker).
    • Cook until 105; then hot sear 2-3min/side in a cast iron.
    • Meat:
      • New York: Costco Prime; 1.5" thick. 60m on smoker to 110 degrees
      • Filet Mignon: Costco Prime; 3" thick. 60m on smoker to 110.
      • Thinner meats: 45m per side
      • Hot sear in cast iron. 2m per side for 1.5” cuts.
    Note the "Cook to 105" but my note say "60M to 110 degrees" cuz I'm still adjusting my times. I've found the searing needs time to add char, but too long takes the meat past a perfect medium. So next time around I'm smoking to 105 and then searing.

    Yeah, Covid helped with that stigma. Plus we just don't care, lol.
    We have been in it since 2019 so we were ready for the lock downs.

    My wife is great, she earns her kid free time for sure!

    Also, I've found this type of cooking doesn't work well with really fatty meats. The crazy delicious marbling doesn't render with the lower temps of the smoker. I've tried this with tri-tip and ribeyes that looked amazing but tasted horrible b/c the fat was still chewy and not soaked into the meat.

    oh, oh, oh...yes I'm drinking tonight...put pizza stones on your Christmas list. Because pizza from a pellet smoker ruins all other pizza. I have an older GMG and crank that phuker to 500-550 for pizza night. The smoker eats pellets like a crackhead but the pizza is amazing.

    I typically run 400 on the grill and don’t bother with a reverse sear. Plenty of good flavor and faster cook. It also helps with the fat render, but we also only buy grassfed/finished organic beef, so much less fat to start with.

    You know, I complain about that old crappy Chrysler vehicles I have to drive at work but I don't think they're the worst any more. Yesterday, I had to drive a 2003 Ford Explorer with power mirrors that didn't work, a radio that didn't work and a speedometer where the major increment was 20 km/h (which is fine) and the minor increment was 4 km/h. :facepalm:

    I'm sure some brands may be massaging the truth but they all claim to have Smart features and protections built in to prevent any damage. The particular one I linked says when the cables are put on backwards it will alert you, not sure what other protections it has built in. As to if jump packs work, I have personally seen them work on a tundra as well as a Subaru outback ( again haven't used this particular brand.)

    Jump packs do work but I have my doubts on this brand for longevity.
    My in-laws buy a lot of Worx products via infomercial, the quality shows its true colors after a year or two.
