    Imagine it for what it is. Leftover pork bits spiced and salted, and smashed together to make a loaf. It's $4 for a can. Go get you some, flop it, slice it, fry it, and try it. I don't like it by itself, but it makes a good ingredient.

    Growing up in Galveston, TX, those that ate spam were considered....how do I say this....underprivileged.

    and, since then, it has maintained it's rep. except for those weirdos in Hawaii.


    I reckon I'm gonna skip out on this culinary escapade.

    It's salty meat goop. The reason why people like frying it on a hot skillet is to get a maillard reaction that provides a bit of texture, flavor and pleasant crispness. Otherwise it is just a gelatinous meat cube.

    It's gotten a bit of a revival in recent times as far as popularity is concerned with young folks acting like it is some amazing thing but make no mistake, it's ground up left over cuts and salt mixed together. It has a long shelf life for a reason. There are better meats available for breakfast, see bacon, sausage, linguica, chorizo etc...

    I will now use it in a sentence.....

    maillard reaction is what I like to do to a big ham-steak on a cast iron skillet.

    I suppose you'll find all sorts of modern recipes that are just ground pork or somesuch. But real tamales in a real Mexican restaurant aren't that.

    I ate Vienna sausages when I was a kid and a young adult with little money..

    I used to work in a small grocery store in the early 80s and one of the old guys would eat potted meat and crackers..
    He would also eat sardines out of the can and that was disgusting..
    The store had a deli and usually, it was the older people that bought head cheese..

    The deli sold BBQ and hot link sandwiches for the lunch run, a $1 a piece.
    The BBQ was made of scrap meat (beef and pork) and the ends of ALL the lunch meat loaves.
    Although both the BBQ and hot link sandwiches were damn good with some hot sauce..:thumbsup:

    we are in east Houston___our ops manager occasionally will get various mexican delights for lunch.

    he simply tells me to eat it...and not ask what it is.

    and it is always outstandingly delicious.

    Sounds kind of like haggis. Everyone has an idea of what was in it originally but nowadays it's pretty just much sausage and it's delicious.

    I lived in a little Mexican neighborhood in Grand Prairie when I was in my early 20's, and one of the residents had a tricycle with a box built onto it and he went around the neighborhood on Wednesdays selling tamales - 6 for $2 or something like that. They were great.

    For me, Spam stays in my Emergency food stash.
    Good amount of protein, fat, calories and sodium when shtf.
    "5 year" shelf life, probably would taste the same after 15.

    I eat it a couple times a year when it sounds good for breakfast
