    Not produced in my province, but the Okanagan in BC does. I can have a bottle waiting for him.

    There's 2 distilleries and 2 craft beweries in my town too.

    Sorry, that was definitely not intended to be salty.

    My wife's parents gave me part of my Christmas present (a ring of garlic sausage) early because it has a best before date before Christmas so I cracked it open and enjoyed it with some cheese and crackers because I was starving and it was too early for lunch.

    When we went to niagara several years ago, we noticed there was a good size wine region around Niagara by the Lake...

    So, the there were a bunch of cabs parked in front of our hotel early one morning, and I decided to find an 'older looking' driver amoung them and asked, 'How much to get us up to Niagra on the Lake'??? He replied w/something very reasonable around $20-30 iirc....and then asked if we knew where exactly we were looking to go. I explained it was our first time there and we just wanted to see the area a bit and hit a couple of nice wineries. He said he was familiar with the area and would be happy to show us around a bit...

    So, I then asked, 'How much would you charge me to secure you for the day; take us up there; give us a good tour of the area; and stand by for us while we do a little shopping and tasting here and there'... He called dispatch, told them he'd be out of service on a day trip for the rest of the day, and told me, 'I'll make it more than fair, go grab your wife, some snacks, and let's go enjoy the day'... Hell Yeah... Done!!!!

    Turns out dude was born in the area, lived in Niagra by the Lake for several years and was completely familiar w/all the wineries in the area.... Dude gave us an appropriately guided tour, explained a lot of history and such in the area, and got us to some really great wineries...

    Inniskillin', Jackson-Triggs, and De Simone were some of the names I remember; prices were less than 1/2 of what they are here (duty free) for some of the Jackson-Triggs and Inniskillin' offerings here...

    Got back to the hotel a bit after 5pm, and dude charged just over $100 for almost 7hrs of driving and stand-by... to me that's incredibly cheap and the entire experience was so well worth it!!! I gave him an extra $120 in tip, ran into him a couple more mornings (bought his coffee for him each morning), and we used him on another smaller excursion... definitely cab find of a lifetime!!!!

    are they comparable to a true smoker?

    taste?

    texture?

    bark?

    I've never used one or been around one.


    I imagine they are darn close in taste & far easier to use.

    My buddy has a wifi/bluetooth enabled pellet smoker he uses via an app on his cellphone. From a convenience perspective pellet smokers have come a very long way. Compared to a legit pit smoker that uses logs etc...I'm not sure they will ever be the same.

    Interesting. I did not have the white meat dryness problem at all. Maybe my lower temp smoke with breast side down (so all the juices ran down into the breast meat) was a factor. Also, I didn’t let it sit very long from the wet brine. Just 20-30 min so I could get the pit up to temp and coat the entire bird in Lane’s signature rub (which I HIGHLY recommend to anyone).

    I’m a big believer in the ceramic egg style with quality lump charcoal (and other blocks to taste, like hickory or pecan). You can do anything on them.

    • Low temp 24-hr smoke
    • Grill over open flame @ 400°F
    • 5 min wood-fired pizzas on a stone @ 800-900°F (I bought the Kamado pizza insert)

    One of my favorite things is to leave half the heat shield in place and start whatever I’m grilling over that for 15-20 min. Even with a 400°F pit, you can get a nice smoke ring, and then you can finish over open flame like any other grill.

    A few years ago I figured I'd get into the smoke game. After some poking around, I found a huge sale on a nice camp chef smoke vault propane smoker. I ended up pulling the trigger on it and have been building my skills on it.

    Overall I'd say it's okay, but I struggle to get a good smoke ring on anything. I've definitely learned a lot but I'm looking to upgrade to a traditional smoker to continue down the path. My brother uses an egg and his smoke flavor is much more consistent and that's what I think I'm leaning towards getting.

    Can someone enlighten me on why I should be looking at a pellet smoker instead?
