You can solve this issue.

Go buy yourself a pound of good beef and a pound of good ground pork. Mix with an egg, some bread crumbs, salt/pepper, some milk, maybe some worcestershire sauce, and throw it in a pan to the oven at 350. Enjoy with some taters of your choosing. You’re welcome.

Take the cheese off the smoker and keep in the fridge for awhile. Otherwise it will taste like ashtray

Definitely seen a few of my friends doing that recently, they used spice or rub of some kind and then like cross hatched it.
