    Authenticity requires a pile of wood out back, paper towels, a squeaky front door, old wooden tables with one random restaurant booth from somewhere else, white bread, a couple of black and white pictures on the walls that isn’t really a picture of anything or anyone that is known by the owners and years and years of built up greasy foot traffic on the floor that couldn’t be gotten up with a 5000psi pressure washer.

    However, if it’s good, I say, eat it up.

    It's super regional and in Canada, truly good BBQ is rarer than hen's teeth. I would say for a start, chain restaurants are out. Montana's, Tony Romas and the like are not BBQ. A real BBQ place has to be independently owned and make food from scratch themselves. A real smoker working away out back is a requirement too. Most places I've seen in Canada either bake or slow-cook food then add liquid smoke or char with a torch, maybe toss it on the grill top. It's not truly barbecued, it's a poor simulation.

    Hard pass on the collard greens for me, though I agree with the sentiment. I require in-house made cornbread to consider a BBQ joint to be authentic.

    There is this other good spot right by work that we frequent, they make stupid breakfast burritos and supposedly bagels as well! But a month or so ago we went to get lunch and after I ordered, I faintly made out “special” thru the plexiglass barricade, and it read the most delightful bbq nacho special.
    When my number was called, I asked/gently told the owner, no one can see your specials, I totally would have gotten the nachos if I would have been able to see them(special board no where near the regular menu let alone behind dimly lit plexi)
    He didn’t really have a answer other than nachos were every Wednesday………..
    Guess where the specials are listed now?
    Right below the regular menu with the full week listed left to right.

    I’m partial to the fried cornbread because I was pretty much raised on it. My Mom used to make it just about every day. You just take some corn meal, water, and a dash of milk, mix it together and cook it like a giant pancake. Seriously good stuff.
