Why no Bourbon balls w/your bourbon

 

I’m not sure I’m down with balls near my mouth.

This is a first for me. Cutting up a beef heart and soaking it in marinade for smoking jerky tomorrow!

 

interesting use for it.

 

What do you usually use beef heart for?

 

I think the last time I had beef heart was when I got peed on by the cow carcass we were butchering because my uncle nicked the bladder while we were splitting it. It might be ruined by association.

 

Can’t say I’ve ever done anything with it. When deer and elk hunting, it was always the first thing we ate - fresh the night of or next night. Sliced thin and pan fried in a little butter with some salt and pepper. Or one guy’s aunt would chop it up and make heart and spetzle in the crock pot and serve it while we were doing the butchering.

 

I’d be down with either of those options

 

Yeah, same here, but I found a bunch of recipes for smoked beef heart jerky and thought it was worth a try. What could possibly go wrong?

Usually in the past when we got a 1/2 or 1/4 beef, we would skip most organs and bones. Recently, cause our budget is tight, we take everything and figure out how to use it. The bones have been phenomenal. Pressure cooker for a couple hours with some garlic, onions and stuff. Chill it and take the rendered fat off. Then strain it and make awesome soup!

You can't beat home made stock. In addition to beef, I'll make it with a turkey or chicken carcass. Freeze it in one cup portions for whatever future use.

I’ve actually been thinking about upgrading/redoing some of the pond. Ditch some of the rock wall water flow(not sealed well so I loose a lot of water) and making a lined water louge dropping into the pond furthest from the pump; which should help with circulation and water loss if I do it right

 

Never had beef heart, but the last elk and deer hearts have been made into fajitas and have been excellent.

 

Since everyone else is cooking, I need to as well. I have apple cider on the go.

 

There’s a difference between guts and organs. Ask any organ player!
