    It was.

    Rib-Eye Steaks with Bacon-Bourbon Compote and Mashed Potatoes
    2 pounds red potatoes, unpeeled, quartered and sliced crosswise ¼ inch thick
    1¼ cups whole milk
    8 tablespoons unsalted butter, divided
    2¼ tablespoons table salt, divided
    1½ teaspoons pepper, divided
    2 (1-pound) boneless rib-eye steaks, 1 to 1½ inches thick, trimmed
    6 slices bacon, chopped
    3 shallots, sliced thin
    2 tablespoons packed brown sugar
    ¼ cup bourbon
    2 teaspoons Worcestershire sauce

    Bring potatoes, milk, 4 tablespoons butter, 1¼ teaspoons salt, and ½ teaspoon pepper to boil in large saucepan over medium-high heat. Cover; reduce heat to medium-low; and cook until potatoes are tender, about 20 minutes. Off heat, using potato masher, coarsely mash potato mixture. Season with salt and pepper to taste. Cover and set aside.

    Meanwhile, pat steaks dry with paper towels and sprinkle with remaining 1 teaspoon salt and remaining 1 teaspoon pepper. Melt 2 tablespoons butter in 12-inch nonstick skillet over medium-high heat. Add steaks and cook, flipping every 2 minutes, until well browned and meat registers 125 degrees (for medium-rare), 8 to 10 minutes. Transfer to cutting board and tent with foil. Wipe skillet clean with paper towels.

    Cook bacon in skillet over medium-high heat until crispy, about 4 minutes. Pour off all but 2 tablespoons fat (leaving bacon in skillet). Add shallots and sugar and cook until softened, about 2 minutes. Carefully add bourbon and Worcestershire and simmer until reduced by half, about 2 minutes. Whisk in remaining 2 tablespoons butter. Serve.

    Never seen or done mashed taters that way (cooking in all the stuff and not draining them). We always boil first, then drain and nah with the milk, butter, and usually a little plain yogurt.

    It works out pretty well - it's one of those Cooks Country recipes. I usually use their recipe for Rustic Mashed Potatoes when I'm working with russets - sounds close to what you do.

    Rustic Mashed Potatoes
    2 pounds russet potatoes, unpeeled, sliced ½ inch thick
    ¾ teaspoon table salt, plus salt for cooking potatoes
    1 cup half-and-half
    10 tablespoons unsalted butter, cut into 10 pieces
    ½ teaspoon pepper

    1. Place potatoes and 1 tablespoon salt in large saucepan, add water to cover by 1 inch, and bring to boil over high heat. Reduce heat to medium and simmer until potatoes are tender and paring knife can be easily slipped into and out of potatoes, 18 to 22 minutes.

    2. Meanwhile, combine half-and-half and butter in 2-cup liquid measuring cup and microwave, covered, until butter is melted and mixture is warm to touch, about 2 minutes.

    3. Drain potatoes and return them to saucepan. Using potato masher, mash potatoes until smooth and no lumps remain. Stir in half-and-half mixture, pepper, and salt until fully combined. Season with salt and pepper to taste. Serve.

    These are my go-to mashed taters. You have to use russets or they don't come out as fluffy.

    Yep - that’s pretty much how we do them. I don’t bother to preheat/melt the butter though.

    Bacon with French Toast? Super easy and great recipe. I freeze the leftover toast and warm it in a toaster later in a the week.

    EVERYDAY FRENCH TOAST
    3 large eggs
    1 tablespoon vanilla extract
    2 teaspoons packed brown sugar
    ½ teaspoon ground cinnamon
    ¼ teaspoon table salt
    2 tablespoons unsalted butter, melted
    1 cup heavy cream
    8 slices hearty white sandwich bread

    Adjust 1 oven rack to lowest position and second rack 5 to 6 inches from broiler element. Heat oven to 425 degrees. Generously spray bottom and sides of 18 by 13-inch rimmed baking sheet with vegetable oil spray. Whisk eggs, vanilla, sugar, cinnamon, and salt in large bowl until sugar is dissolved and no streaks of egg remain. Whisking constantly, drizzle in melted butter. Whisk in milk.

    Pour egg mixture into prepared sheet. Arrange bread in single layer in egg mixture, leaving small gaps between slices. Working quickly, use your fingers to flip slices in same order you placed them in sheet. Let sit until slices absorb remaining custard, about 1 minute. Bake on lower rack until bottoms of slices are golden brown, 10 to 15 minutes. Transfer sheet to upper rack and heat broiler. (Leave sheet in oven while broiler heats.) Broil until tops of slices are golden brown, watching carefully and rotating sheet if necessary to prevent burning, 1 to 4 minutes.

    Using thin metal spatula, carefully flip each slice. Serve.

    I've got this app called "Paprika" that I use for all of my recipes. It can grab recipes off of a web page, it syncs with my computers and my phone, has a built in shopping list, and Mrs. Bandito can add to it in real time from her phone.
