    My god what a time the last few days have been , yesterday was a madhouse LOL..

    So today its just me I am cooking for, sooooooo I picked up a slab of baby backs, got the weber performer fired up and smoking at 275 degrees....will use the 3-2-1 method along with the minion method. Decided to use the performer and not the WSM since I am only cooking for me.

    3 hours on the smoker un covered.

    2 hours wrapped in foil, I normally add some liquid to the foil pouch, like some beer...

    then 1 hour out of the foil at which time you can sauce then if you like.

    Time vary but that's what I try to stick to.

    Just wrapped them on foil, the rack is starting to loosen up and getting all nice and bendy.....so I will check it again around 1 or so....until then I think its nap time...

    Well here we are, I opened the foil and they look and smell awesome, went ahead and sauced them up, will leave them on for about 30 more minutes then bring them in to rest.

    and done, ate half the side, saved the other half for lunch tomorrow at work, to make everyone drool and beg LOL and they will....

    just look at that smoke ring DAMN!!!!!!
