    My go to at the store is Farmland thick cut. I like to grill bacon, but we also cook it in the oven.

    Every once in a while I will make some pig candy in the smoker. Just take some bacon, coat it with a mixture of brown sugar and crushed pecans, and let it smoke for 2-3 hours at around 225-250.

    I still haven't tried smoking pork belly, but I really want to. I have had some and it is awesome.

    Yep. Best to do it indirect (not over the flame/charcoal), otherwise it flares up like crazy and burns the bacon. But, indirect heat and a lot of paying attention always delivers some good, crispy bacon. Also, if you do this a lot, make sure you clean your grill thoroughly often to avoid future fire problems.

    THIS. when i eat one pack i rotate the on in my freezer down and put it on my next Costco run's list. Bout a pack per week.


    Oh and if you don't have a jar of bacon grease in your freezer to cook with you should leave this thread right meow. no other oils in my house, but bacon grease.

    maybe I could start a food truck to fund my much needed SD trip lol....for real though.

    It was for a birthday and a going away/moving to a different shop. No this doesn't happen every night. Maybe once every couple of months and not always these burgers. This was just a special treat.

    Edit- yes the cheese usually stays on the burger perfectly fine...but I had to prep them a little faster then usual due to the amount I needed to make.

    Deal! this was supposed to be 24 burgers..somehow ended up with 26. 12 pounds of ground beef and three packs of bacon and 2 blocks of Tillamook cheese and 2 Walla Walla onions. I walked into Safeway and asked the guy at the meat department if he had any ground beef back there...he got smart with me and showed me the 2 packs he had on the shelf...I said oh thats cute but I need 12 pounds...he was not impressed.
