    Honestly I don't do anything magical or harry potter spells and shit....

    Look at the first pic, its 22inweber kettle with the cart, kingsford charcoal on one side, a few chunks of apple wood and drip pan and he meat, vents set to half open top and bottom walk away for 4-5 hours, come back wrap tightly in foil, close lid come back in 3-4 more hours, take temp, 200 or higher and bring in the house to rest for an hour, shred face plant drink beer...

    That's all I do....seriously hell maybe its a gift, who knows..

    Cabelas electric pellet smoker (don’t mock me).

    I think the brisket is getting bark; will know shortly. But my butts stay the color of the rub. I’ve read that you need sugar for it to turn black, nit sure how accurate that is, but there is brown sugar in my brisket rub and it looks to be turning black so maybe there is some truth to that.

    Everything I smoke comes out looking like a meteorite. Bark is formed when you caress perfectly seasoned meat with smoke, water vapor and just the right amount of heat. Keep your cooker at a consistent temp. Use some sort of sugar in your rub. For me its honey, molasses or brown sugar and always maintain a TBS. Thin blue smoke. The thick white shit is not good! Sorry I'm one of those passionate BBQ is a science guys

    Thanks. Came out good, but not great, for my first try. I would have liked it juicier. I think next time I’ll wrap it vs all smoke to 200*.

    No sugar here in anything I smoke. For briskets, I use 50/50 kosher salt and course black pepper blend.

    Sugar is an easy way to develop bark though as it burns.

    Do you spritz the meat as it cooks? It’s supposed to help with bark formation as it gives the smoke something to adhere to.

    For juiciness, I’d recommend using a water pan. Keeps a humid environment in the chamber. Spritzing will help this too. Also wrapping is will be the most beneficial. Braises the meat vs. it continuing to lose the juices.
