    Put in 130 taps yesterday. Took a few hours, there's about a foot of snow which made it tough. The weather was amazing yesterday and today so ended up with almost 400 gallons of sap today. Boiled from 5 til 1 tonight but exhaustion got the best of us. Drew off about 3 or 4 gallons of syrup.
    I work 9 am to 930 pm tomorrow and will probably cook again til 1 or 2 because the weather should be good.
    In the second pic you can see how the sap enters the front pan (right side of pic) and as it flows through the cutouts in the baffles it gets closer to being syrup. Cold sap slowly trickeled into the back pan pushes everything along.

    Just collected 200 more gallons of sap from 90 taps. Have to to go work now so my brother will have to get the remaining 40 taps when he gets out of work, should be at least 100 more gallons with this perfect weather. Then we'll be cooking again tonight.

    Cooled down last night so sap flow was a little slow today. I collected sap from 10-1 today from all 130 taps. Got about 130 gallons. Not too bad. Already had 100 gallons stockpiled. I started cooking today at 5. Probably won't finish it all and won't cook tomorrow I don't think. Weather looks amazing through the weekend, I wouldn't be surprised if we haul 1000 gallons of sap tomorrow through Sunday. But we'll see.
    So far we have 7 gallons of syrup done and ready to filter and bottle. Not bad for 4 days into the season.

    My brother truck. He got it free from his wife's grandfather. I think it's a 95, Chevy 1500 work Truck. 2wd, V6. It has 33,000 miles on it. It's mint as you can imagine. Decided to use this to haul sap, he has a daily driver Subaru and my only car is my tundra so when I'm busy or at work wed have to swap cars and shit so this works out better. It just sits at his house and either of us can use it. I wouldn't put much more than 200 gallons in it but that's plenty.

    I'm beat today. Just finished collecting 400 gallons one bucket at a time. Puts me to almost 800 gallons in the last 3 days. I work a 12 hours shift tomorrow, that will feel like a vacation day.

    15 gallons that needs to be filtered and bottled. And there's about 3 gallons in a stainless pot. That's more than half our season goal in 5 days. We should have a other 4 or 5 weeks of sap too

    Shutting down for the night. There is a about4 inches of coals but this is considered shutting down. Normally while cooking, the fire box gets filled every 5 minutes with wood. There's no damper by design so this baby runs wide open and hot as hell. For a full day cook you can burn over a half cord.

    Still have about 250 gallons of sap stored to be cooked. I'll assume another 200 tomorrow. Taking tomorrow off from cooking. Saturday we'll cook all day and collect hopefully another 200+ gallons. Good times.

    I guess I shouldn't say no flue. There's no damper in the pipe. The idea is as much flame as possible. Ideally the flame runs across the back pan creating a really good boil. Less flames and the front pan gets too hot and ahead of the back pan. Theres a lot to it. So if you had a damper the front pan would get too hot and cook faster than the back.
    Hard wood is ideal just because it burns hotter but we do burn some pine. It's split up into skinny pieces for more flame.

    So this is what the back pan looks like. (Front pan removed for pic) This isn't mine but same idea. The pan has deep corrugations, actually they're called flues. And yes the sap does go down into them as well as about and inch above them. The idea is that these flues greatly increase the surface area of the pan, and they sit down in the flames as the fire makes its way from the firebox under the front pan and out the pipe.
    My evaporator has 10 8" deep x 1" wide flues. So that's 160" of increased width and the pan is 6 feet long....So if your stretched out my 2 foot wide pan to where it would be flat, it would be about 15 feet wide x 6 feet long. That's a lot of surface area and is why it can cook so fast.

    Cooked for a few hours today. Didn't have a ton of sap because it's been so warm but the weather looks like it going to be good all week. We were able to draw off about 5 gallons today. Bringing our season total to over 20 gallons. Maybe 23ish. We were thinking we'd make 30 ish this year so we are 1 week into a 4 to 6 week season and 2/3 to our goal

    It's been 60-65 for 3 days now and hasn't got close to freezing at night. But from what you say it sounds like colder weather is coming, which is good.
    Ideal is below 30 at night so the sap freezes and build up below the taps, then 40-50 and sunny during the day so it starts flowing fast. This week looks pretty damn good. So hopefully we'll have a good week.

    I had some extra hands today which was great. We collected about 150 gallons in the morning and got the sugar house finished while my brother cooked. Drew off about 5 more gallons today. We're up over 25 gallons now. Great season so far

    I think what I'll do is bottle up some half pints in plastic and mail them out to you guys. I can go bigger but not sure what it would cost to ship. I think I can do $15 shipped on the last pints easily. Ill have to check usps "it fits it ships" boxes. But would certainly be willing to do more if you wish. As busy as we have been I think we'll be bottling it all at once at the end of the season. Or maybe half way through if we get a slow few days.
