    Last year I made about 80 gallons of syrup. This year may be close to that. The issue with this year has just been I have taken on twice the workload and it really could have been more productive than it was. All in all itll be similar production to last year.

    Thanks buddy but I think I will be pretty much shut down this weekend... other than filtering and bottling syrup which I just do a little at a time once the season winds down. I really appreciate the offer.

    Boiling away since 9 this morning. Got through a couple hundred gallons of sap ...of the 800 that is waiting to be cooked down. Trees are probably dripping like crazy right now. It's about 50° and sunny after a cold night. Perfect conditions but I can't go get it til I cook a bunch of what I have. On the bright side I have made about 4 gallons of syrup today

    This os the front pan also called the syrup pan. Theres a thermometer in there that shows the temp of the syrup or soon to be syrup. Generally syrup is at the right viscosity at 7° above boiling temp of water, so around 219°. Some days it can be higher, today its about 221°. That's when I know to open the valve and start taking syrup out of the pans. As its pouring out I test it with the hydrometer which has a red line to indicate that it is indeed syrup. Pic of hydrometer and test cup which is coated in maple sugar, I love picking that off and tasting the goodness.

    This is the back pan, also know as the flue pan. You can kind of see the "flues" , the pan is essentially corrugated so it has a lot of surface area. Each flue is 8"deep and an inch wide and the flames and heat go through them on the way up the smoke stack. The majority of the cooking gets done here. If that pan was stretched out flat it would be 14 feet wide.

    There is a steady flow of sap that comes from this stainless tank, through copper pipe and into the evaporator. I control how fast it comes in with a valve. I try to keep about an inch of liquid in the pans and have to constantly adjust valves to keep it right. I pump sap from the truck tank up to that stainless tank which is called a head tank or gravity feed tank

    If you've got 2 guys running the evaporator then yup that's the time. Best part of the whole process. Unfortunately when you're all alone there too much to keep track up so not much sitting. I definitely need to simplify things here so I can have more time for that!

    Ended up getting about 500 gallons today. This is very likely the last day of sap collection for the year. There is about 800 stored up at the sugar house and I really, really hope my brother boils it tonight and this weekend. I worked hard to get all that sap and I have to work all weekend and can't cook it. Its supposed to warm up quite a bit this weekend and will be very upset if the sap spoils, it's a lot of work to go get. He says he will boil it so I really hope he actually does.

    Well the season is done and over. Weather for too warm, buds started to form on the trees and the sap turned from sweet to it so sweet. So We stopped collecting sap last weekend and i got the last of it cooked Tuesday. Ended up right around 80 gallons. Just need to filter and bottle some. My brother was supposed to do some this weekend as I was booked up with stuff with my daughter, then she ended up getting sick so the weekend was a wash anyway. So a few weeks of filtering and bottling and I should be able to start taking orders.
    I do need a day to go pull the taps out and take my buckets home so I can start cleaning stuff.

    I feel awful that I haven't updated this thread and haven't sent ant syrup out yet.
    My brother was supposed to make up for screwing the season by bottling the last 2 weeks, well he didn't and I haven't had time.
    He was also supposed to go take down the buckets from the trees and never did that either. So I did yesterday before they rusted out and got ruined. The metal buckets would cost at least $10 a pop to replace so I wasnt waiting for him anymore. I started cleaning them out today. This is about 1/3 of the buckets soaking, next is bleach, then power wash. Clean up sucks but someone has to do it.
    He says he will bottle this weekend, promises me that he will. If he doesnt then I will go next week and pack up all the finishing and bottling equipment and set it up in my garage. That's about a 4 hour process just moving and setting up. But having it at my house will allow me to bottle everything in a couple days. Everything is at the sugar house, aka my brothers barn now and bottling there is very tough for me because as the syrup is heating up you can not leave it, and heating can take 2-4 hours. At least at my house I could do other things as it heats and filters and check it now and then. When I do it there it's just a lot of sitting around.
    I apologize to everyone who is waiting and appreciate your patience. As it is, with him dropping the ball a few times I figure to have lost about 10 gallons of syrup from non productivity, which is a $1500 loss of revenue. I just hope to be able to serve my repeat customers and save my reputation and hopefully next year will go smoother.
    *edit* by return customers I mean 2 local stores and farm stands. I should be able to fill every tundras.com order whether you've ordered in the past or not :)

    That's a bummer dude. Hopefully you can look back at it and realize it's a hobby and supposed to be fun and not a business venture. Reap the rewards that you get from the hard work this year and not focus on the what could have been scenarios. Remember your health and stress levels are more important than our orders. Wish I was closer as I would totally help out.

    @Pudge That looks like some serious work to accomplish the end result. I haven't tried any in the past, but am hoping to this season (as long as you have enough to go around). If I wasn't so far away I'd offer to come and assist with whatever you needed, but from AZ it's a bit of a haul. Sorry to hear about the lost revenue - maybe bump up the cost a bit, even $1 or $2 per bottle would go a long way and I'm sure it wouldn't cause anyone not to purchase.
