Could someone suggest a brand of "good" knife for the kitchen. German, Swiss or good ol' American steel. Looking for something in the 11" area. Maybe a good pearing knife too. Ty

I mainly use the miracle blade set because it is cheap and works and has wood block to store all knives(extra add on). . I also use Rada i think?

Kitchen>>>>Wusthof(German) or Ancienne Maison (French) chef knives......simply ....the best...not cheap. I have both and have relied upon them for years.

I'm a picker when it comes to knives. I got my Wusthof chef for $6 at my my local ARC thrift store. Retails new for $140. Near new. Got my Ancienne Maison for $4. Used slightly. New...A hell of a lot more. Got a full set of early 70's Gerber carving set in original wood case new mint condition at ARC for $7, can ask for $150 easy.....don't ask about my pocket or hunting knive collection......heh...heh.......
Thrift store folks have no clue what they sell and how to price it.

Any vintage Japanese chef/kitchen knives in good condition are tops....got a few of them too. Foolish to buy new. Do some research and hit up your local thrift stores and estate sales. I have a huge cast iron collection too. Nothing beats used/seasoned cast iron.

We have a full set of Wusthof knives, love them. Don't have much to compare them up against though.

I looked up that wusthof and saw the price, woah. I might try to hit up some garage sales or something. Sounds like you got some great deals there.

I know that good knives cost. There is a big indoor flea market nearby. Wife scored a pokie fork there. Will have to take a run up and see if we can find something. Now that I have brand names to look for

I posted pics here on my build thread I think of the Wusthof and Ancienne Maison. I don't post a lot here about my cooking skills. Was raised in a family that really enjoyed cooking from scratch. My brothers and sister still enter their baking goodies and garden veggies at the local county fair every year. Runs in the family....

Nice. Getting my garden ready soon. We like to cook from scratch too. I have got food poisoning at some very nice restaurants (or what everyone said was nice). Plus i have heard of ....what goes on behind the scene at "name brand" restaurants. I know not all restaurants are bad....but i will tell you one thing....i will never send my food back. Lol

We have Wusthof also. To be honest, the Miracle Blade ones we have are pretty close to them in cutting abilities. In some situations their better.

Does anyone have any insight into the "pokie" forks? That's what my mother called them. I can remember her and my grandmother using them to see if cakes were done.

After I "fired" my ex, I raised my 2 kids on my own. Was tough whipping something up everyday but I enjoy going to the grocery store and NOTHING beats good knives! FYI...when looking for used knives...keep this in mind...look for these brands/country/city on the blades too, Solingen, Sheffield, Utica, Puma, "Japan"... Never ever buy cheap Chinese "Japanese" knife knock offs or anything Chinese...that's for Walmart.....and.....only guality stainless chef knives can be sharpened and honed with what you would expect to last for years...stay away from fad knives you see on the boob tube...

I think they were used mainly when cooking. Helped turn things easier, checking cakes, etc. dont know for sure though.

I’m sure you’re right. I’m certainly not an expert, and don’t do much heavy work with them. We have had the Miracle Blade set for over a decade though.

The Wusthof we have are excellent knives, but not sure we’d buy them again. We just don’t have enough need to justify the expense.
