I just started towing a trailer with my 2014 tundra. 5.7 v8. Do have to use the towing mode or just use drive.

Welcome from UT. It is recomended to use Tow Haul if the engine is put under strain towing, it helps keep the transmission lasting longer etc, plus it holds gears longer so you don't lose momentum.

The tow/haul feature is one of the most frustrating design flaws on the tundra.

It only works in D mode. If you switch to S mode, then tow/haul is gone.

It really depends on the terrain and your trailer size. I don’t like pulling in 6th, and any amount of hills you will want to be in 4th. I used D with tow haul to accelerate then switch to S mode for cruising
