Worked a closing shift at the store, get home, fire up the WSM and rubbed my butt....It been on for a little over 5 hours, hit with some apple cider vinegar and loaded more fuel into the WSM. Here it is at around 8 this morning, so 8 hours into the cook. The fat cap finally split, at 5am it had not and it finally got the bark I was wanting to see. Hit it with more apple cider vinegar and wrapped in foil. I did need to add more fuel to the smoker, but that's to be expected after 8 hours. Little WSM held about 245 all night.
