    Curiosity got the best of me. I used red pepper and red onion. Did not have the Chipotle Garlic Rub so I used Meat Church fajita seasoning and a little Kosmo SPG. Went on the smoker about 15 minutes ago at 275. Will wear off at the end.

    Ordered a 10-12lb prime rib roast yesterday for Christmas. If it's like last time, it will be 14-15lbs of pure heaven.

    I’m sure it will turn out awesome! I also have the Meat church Fajita seasoning. Love that on chicken fajitas. If you decide to try that chipotle garlic it’s really good on tri tip by itself also.

    By the way your tie job looks a lot better then mine. I went a little heavy on filling ingredients and it got a bit sloppy.

    I wish... No, just my local grocery store. They gave me an amazing piece a few years ago so went with them again.

    Reminds me, I need to order a brisket from SRF

    So I got a pretty big flank steak at about 3 pounds and was pretty thick. I butterflied it like he says to do. I cut up 1 red onion and 1 red pepper. 1 red pepper was just right, I used about half the red onion. Pretty good layer of Monterrey Jack cheese. It was pretty big and full. I might also dial the stuffing down next time, but will see how it tastes.

    Mine went on the Yoder at 275 for about 1.5 hours to get up to 120 degrees. Pulled it off for about 5 minutes while grill got up to 475. Seared on each side about 3 minutes and just pulled it. Tried a little bit of pepper, onion, and cheese that was coming out and man was it good!

    I think I might order some of Derek Wolf seasonings but they are pretty pricey compared to others.

    Sounds awesome!!! Costco has a really good Prime Rib in Prime grade and it is good! Not the cheapest, but not the most expensive. If you have a Costco anywhere near you.

    It was pretty cold here when I did mine and was going to mention I left mine on a little longer...same as you exactly. I seared mine off on Riot mode which was running around 700 that night.

    I am pretty sure Spiceology was running a 20% off sale a few days ago. Their stuff is amazing! A bit pricey for sure. I’m already planning on making this again.

    Costco also has decent prices on brisket (Prime). If you talk to the guys behind the meat counter they will sometimes slice a whole one if you only want the point.

    Came out good. My wife said great, but I think it needs a little more smoke. Seasoning is really good. I don't understand the attraction to butcher paper for the crutch. Foil holds all of the juice in, yummy.

    Looks awesome! I believe the butcher paper is an attempt to avoid steaming as occurs when foil is used. Obviously not going to avoid it completely either way. If you get too much steam action you lose the crust on the outside and that is a critical part of a well smoked brisked for a lot of people.

    So I picked up my rec-teq 540 with the beefy cart for black friday sale. Upon assembly I discovered the control module would only light up but give no display. I was able to set up everything online with the app and get the initial burn in. I gave rec-teq a call & they overnighted the new controller plus internal thermometer just in case it was bad too. They aren't joking about excellent customer service.

    Youtube university showed me how to install new module one hour later plus no lost 10 mm combo wrench and away she goes! The first cook being 6 wonderful sirloin burgers seasoned with the traeger saskatuan rub. Pretty tasty. I gotta admit having the app controller or hand dial is pretty slick.

    I've managed to accumulate two dedicated kitchen drawers of the traeger, kosmo and now rec-teq seasonings I'm gonna try thier dirty gurl bloody mary mix later this morning.

    Those are great pellet grills! I had one for about a year. Loved it! My brother in law wanted a pellet grill bad so I gave it to them for a gift. I had been eyeing the Yoder’s for a while and it was an itch I had to scratch, so I have had a Yoder for almost 2 years now. They are for sure a level up compared to some of the other smokers close to its price range.

    Smoking and grilling is an addiction.... This is only some of the seasonings I use. Have about 25 rubs and seasonings you can see. I am about 10 short that I have used and need to replenish. Have some Mississippi Grit seasonings being delivered on Monday from Swine Life BBQ. Need to replenish some of Komso seasonings and rib glazes to get stocked back up. I basically have a whole pantry dedicated to bbq rubs and seasonings, haha,

    Just fired up the Traeger for this pair of tri tips seasoned with Derek Wolfe’s Chipotle Garlic.

    Going to reverse sear them. Will take the Bullseye out later for the sear on Riot mode.

    Dessert today is another first. Going to smoke a S’mores skillet in a cast iron skillet for about 15 minutes or so on the Traeger. Then finish it off with a quick blast from the torch.

    After pics in a couple hours....unless I drink to much vodka :rofl:.
