    Yeah buddy! I love some thai chili on smoked wings! Although just an overnight marinade in italian dressing and hot sauce and a salt pepper garlic dry rub makes for some amazing wings too. But always gotta sauce a few!

    I salt and peppered them with some garlic powder before the sauce. I took some of the non sauced ones and ate them. Sooooo good

    Ive got some Opah on the smoker right now. Usually do Salmon, but thought I’d try something new.

    cured overnight with my signature rub (salt, garlic and onion powder, pepper and a touch of paprika) as well as a half cup of pure maple syrup.

    Seasoned with SPECIAL SHIT that my little boy loves.
    Smoked with hickory pellets to reach internal 135 Degrees.
    Had the Weber charcoal grille going with briquettes to sear.
    11 yr Son said they came out amazing and thats all that counts.

    Thanks! I had to go very light on seasoning for the kids to eat it, i dry brined it though. I’m new to brisket, only my second attempt, i learned something: the fat layer in the middle of the flat was throwing off my temp probe big time! I’ll position it different direction next time

    So I recieved this as a gimme.

    Don't really know what to do with it. Could just use it in place of liquid smoke (which I dont really use anyway unless I'm making a sauce) but that feels wasteful for a pretty unique product. I've got a few ideas but thought I would see what y'all came up with. What would you do with it?

    1 stick of butter melted
    3-4 Cloves Garlic Minced
    1-2 Teaspoons of smoked sea salt

    Use this as some butter to go on steak, or do some grilled shrimp on the grilll and use the butter to dip the shrimp in as a sort of a scampi.

    I got some pink butcher paper. Going to let it roll till 160 and wrap it. Any tips from the pros?

    I’ve got a brisket soaking in Guinness and plan on smoking it tomorrow. We always had the brisket ground into hamburger when we got our past cows butchered. We’ll see how it works out in the smoker tomorrow.

    I found a motorcycle at a ridiculously low price and took off to go pick it up, so the brisket went unattended in the smoker for 4 hours and didn’t get wrapped.

    It’s a little dry, but otherwise pretty good abs stupid tender.
