    Staying up late to prep some pork butts. I am doing these differently. I usually do them 275 or so. I am going to start off at 200 to 210 on the Yoder overnight. Once they hit 170 or so I will wrap in butcher paper. I am using a Melvin's BBQ rub out of Charleston, SC. On the left How to BBQ Right BBQ Rub. I just put on the pork butts. will let them sweat down and put on the smoker in about 30 minutes.

    Got some family coming over so doing pulled pork on Hawaiian Roll Buns, Coleslaw, BBQ Baked Beans, and some salad.

    Grilled up pollo and carne asada from my favorite butcher in San Diego County! Santa Fe Meats. Served it up with rice, beans, salsa, tortillas and guac...hardly any survived only grabbed the before pics!

    Yes, it is very very good still. Their onion rings and hush puppies are still some of the best around anyhere. Anytime we go to Charleston, Melvins is our reasonable lunch place we go to. For a restaurant/fast food it is great!!!! They do a really good job with their BBQ.

    Our other favorite is Jack's Cosmic Dogs. Their hot dogs are some of the best in the world. Their hot dog with sweet potato mustard and blue cheese slaw will hurt your feelings.

    For those that like a true Carolina sauce, Melvin's is hard to beat.

    Put this little guy on early Saturday morning and done in time for a late dinner. I needed a touch more charcoal in the last hour so I threw in some cheap stuff that a relative had bought a while back. It was such a strong chemical smell that I had to tightly wrap in foil, thus making the crust moist. But in the end, flavor was amazing so I'm not complaining (neither is the family)

    Put a 17lb. Prime Brisket on at 11pm last night. Pulled it off and wrapped at 7:30am this morning. Put 3 racks of ribs on about an hour ago. Brisket should be done about 3, so I can let it rest for 2 hours and then cut and slice. Ribs should be done right at 5pm.

    Also have about 40 wings going on when the brisket comes off for an appetizer.

    About 25 people are coming over for the BBQ. Got 2 truck bed fulls of fireworks and 2 mini kegs of beer. Should be a fun and hot night!!!

    Almost go time.... Everyone killed the wings. Smoked at 200 for 1.5 hours, then crank the grill up and crisp the skin for about 1.5 minute each side. Homemade blue cheese and they did not last.

    Brisket came out amazing. Wrapped and waiting. Got the burnt ends and ribs on the smoker setting up. I like a dry rib, but people usually like sauced better for the most part.

    Got some bbq beans, loaded baked potato salad, pickled red onions, corn on the cob with honey lime butter, sweet corn muffins, and classic banana pudding. Munchie Munchie time in about 15 minutes....

    Just rinsed the brine, need to let it set out for a couple of hours. Then it's on the smoker at 200° for 3 to 4 hours. Salmon, creamcheese, onion bagel and salad for dinner.

    A small, about 2 lbs, deer roast. Dry brined with kosher salt for about 14 hours. Rubbed with Southern Soul Dust. I was hoping for leftovers tomorrow, but no such luck.
