    Smoking brisket is more an art than science. It will be done when it's done. Don't get frustrated with the stall, it can take time. Mine have gone 2-3hrs before returning to the regular temperature climb

    I have good luck just wrapping in the pink butcher paper and going but yeah I dont use a thermometer on it..just feel the probe slide and go lol....

    Smoked 3 hours at around 185°. Sprayed with Apple juice and bourbon, wrapped and back on for 2 hours at 200, then unwrap for an hour. Looking good so far.

    My favorite pellets and they happen to be the cheapest. Bought 20 bags tonight just in case.....

    Was going to order 1/2 pallet from BBQ Delight but these are the best and I have tried 20 to 30 different pellets. Lumberjack Competition Blend.

    Early reports from my dad and father in law on the Masterbuilt Gravity 560 are that it's awesome and cooks freaking perfect. Neither has done a real long cook yet but seems promising based on their impressions and other reviews I've read.
