    Rubbed down a 4lb bone-in pork butt last night with a home made rub (salt, pepper, paprika, brown sugar, coffee...)Put it in the smoker about an hour ago. Ill pull it in a few hours and toss it in the crock pot with some of the mini's bbq sauce I have thanks to @driverdog
    I have a masterbuilt 30 electric and an AMAZEN smoke tray that I put some apple dust in. Trying out my new grill thermometer I got on Amazon on a lightning deal for $30. Bluetooth, monitors grill temp and up to 5 meat probes.

    Moved to crock pot with some bbq sauce. Had 5 hrs of smoke which should be more than enough. Plus it started pouring rain out there. Just finished up some cole slaw for a side. I did pick up some brioche buns as well. Looking forward to dinner, maybe some corn on the cob too.

    Since i had the smoker going and my friend gave me some fresh eggs on Friday and I happened to have some local farm sausage in the freezer, I made put together some scotch eggs that are getting some smoke as I write this. Never made those before but i. Sure they'll be good for breakfast tomorrow

    Plain ol chuck roast. Rub the roast with honey and then rub vigorously with my homemade rub. Salt, pepper, paprika, onion powder, creole, garlic powder and brown sugar. Set smoker to 275° and neglect it for 10 to 12 hours till it hits 190 -195 pull it slice into small 1/2 in cubes throw some more rub and a bunch of hot bbq sauce wrap in foil and put back on smoker for hour or so. If you dont want burnt ends pull it and wrap for 2 hours and make pulled beef should pull apart like a pork butt

    I got a little too excited and hungry to take pics when it was done lol. This is all I got. Came out great , the slaw too. That mini's bbq sauce is just amazing IMO.

    You can see the scotch eggs there I'll have for breakfast.

    Nothing like smoked turkey. And the gravy made from those pans drippings is unreal. I mean gravy is good, but smoked gravy? Not even fair

    Next time I fire up the smoker I was thinking of tossing in a bowl of water on the top shelf. Smoke the water, pour the water into ice cube trays, freeze it, boom smoked ice. Could be a nice addition to some bourbon or one of my maple old fashions....

    Just maintaining a good even temp, getting a constant TBS(Thin blue smoke) and to get a nice bark use a rub with a good salt and pepper base and some kind of sugar or brown sugar.
